Bavetta grande, una bistecca tenerissima dal sapore inconfondibile, succulenta e gustosa. Consigliata a cottura mediumrare, ma si puo' gustare anche a cottura media e anche piu alta perche' rimane tenera e gustosa anche a temperature interne piu' elevate.
